Summertime Salad

Our favorite summertime salad from the garden is quick to make and delicious to enjoy alone or as a side salad.
1 cup fresh juicy tomato's
1 cup peeled and sliced cucumber
1/3 cup red onion
1 red pepper
2 Tbsp of olive oil
4 Tbsp of rice wine vinegar or fresh squeezed lemon
A pinch of garlic salt
salt and pepper to taste
optional - 1/4 cup of feta cheese
In a medium salad bowl put in olive oil and vinegar. Chop up tomato's, pepper, onion and cucumber and add to the marinade. Sprinkle vegetables with garlic salt, salt and pepper. Serve with feta cheese on top (optional)
