Raw Energy Bars

This is a recipe that I have come across a couple of different ways to make these easy healthy cookies.



INGREDIENTS for the healthy cookies:

  • * 3 cups old fashioned organic quick oats (1/2 reserve & blend)
  • * ½ cup whole flax seed
  • * ¼ cup organic raw cocao power
  • * 3/4 cup raw almond butter
  • * ½ cup honey
  • * ½ tbsp spirulina (I once put in a few teaspoons thinking more would be better, it was not a good idea)
  • * 3/4 cup warm water

    INSTRUCTIONS

  • - Mix ingredients all together.
  • - Roll into small balls the size of a golf ball
  • - *In a coffee grinder or Vitamix, blend up a 1/2 cup of oats or nuts of your choice to dust the energy balls

    When I make these healthy cookies, the texture will be a bit too sticky to cut and dust with the powder*. So spread the mixture out in a 9 x 13 pan and cover for a few hours to let them set up. Once set up, then cut into small bars and lightly roll into the ground up oats or nuts.

    These little healthy treats are easy to store in a zip lock bag and kept in the refrigerator for up to a week or you can put half in the freezer for a treat next week.

    These are one of our favorite little energy snacks that we can take on the go or enjoy anytime. I hope you will give these tasty little healthy treats. And I encourage you to have fun adding other nutritious options to your own mix.
