Polenta Pizza

by Colleen Crawford
(Ontario, Canada)

First prepare the polenta.
Add three cups of water in a medium size pot. Bring to a boil. Add one cup of cornmeal. Cook over medium heat for about 15 minutes, or until polenta pulls away from the sides of the pot. Stirring often.

Next prepare pizza sauce, by using tomatoe paste with a little added water to thin it out slightly. Add fresh herbs or dried herbs to flavour.

When polenta has cooled down a bit, line a pizza pan with parchment paper. Spread polenta thinly over pan.

Add toppings of your choice.

Grilled veggies,
Fresh veggies,
Fresh pineapple,
Sundried tomatoes,
Organic ground chicken or beef.

Top the pizza with lots of grated cheese of your choice.

Bake in 350 degree oven, until browned and the crust is cooked throughly.

ENJOY!!!
